Got an unripe avocado on your hands? Rather than waiting a few days for it to soften, you’re ready to make your first batch of Crispy Oven Baked Avocado Fries 🙂
You need about 10 minutes, some flour, an egg, salt, pepper, and either breadcrumbs or cornflakes. I didn’t have breadcrumbs so I used crushed cornflakes and the result was delicious and crunchy. Unripe avocados really work best, otherwise your “fries” won’t hold together when you go to pick them up.
Simply coat the avocado slice in some flour, then dunk it in a beaten egg which you’ve added salt and pepper to, then cover in cornflakes (which you’ve crushed using a small hand mixer) and place on some parchment paper. Repeat until you’ve coated all of the pieces. Once all of the pieces are in the tray, drizzle olive oil and salt over them. Here’s what it looks like pre-bake:
Bake at 200C (392F) for about 10 minutes, flip over the avocados and then bake another 10 minutes.
Serve with some ketchup and voila!
So now there’s no reason for fries to be reserved for those not following healthy eating habits… You can enjoy fries now, too 🙂
