Since I starting making my banana bread by incorporating chunks of bananas into the batter last, I just can’t seem to get enough of it. This Chia Pecan Banana Bread recipe came about on the spur-of-the-moment… don’t ask me, sometimes I just get ideas and then have to act on them right then and there. When this loaf started puffing up in the oven, I got all excited and couldn’t wait to sink my teeth into it. But I did manage to wait until cutting into it until it cooled to room temperature. And the French way of eating is pretty particular, as French people eat at one of the 4 meal times, with “gouter” (snack) time being officially recognized as an acceptable time to eat. It’s much better than all-day grazing (I, too, used to be an all-day grazer, and had 10 kilos more, although there is no need to convert that into pounds, we don’t need to go there)… Anyway, try sitting down and eating proper meals, I think you’ll find that you might be happier 🙂 Why graze when you know you have this gorgeous loaf waiting for you at snack time!?
Back to this Chia Pecan Banana Bread. The pecans work really well with the bananas, and they’re only on the top, in case you’ve got someone who would prefer to pick them out (although I can’t understand why anyone would!) The chia seeds add a nice little crunch, yet a little softer than poppy seeds for example. The loaf is sweet, but not too sweet, as it uses a very small amount of raw cane sugar and “miel de ronce” (wildflower honey). It also contains some coconut oil, spelt flour and whole wheat flour, to add some nice nutrients.
Photographing my creations lately has been a bit of a challenge, as you may have heard we’ve got a lot of rain lately. The Seine is just about capacity and the Louvre even closed for a day to evacuate some of its artworks that were at risk. But luckily the worst seems to be over. Here in Normandy, we live on the plateau on top of the “vallée de l’Eure” so even if it rained a lot, we would not be affected by it at our “chez nous” (home). But my strawberry plants could really use some sun… I’ve got some big green berries just begging me for some warm rays… I guess we’ll just have to wait a little bit longer.
