Okay, okay, I know, the word mocha already encompasses the fact that these cookies have coffee and chocolate in them, but for me it was just totally necessary to add the Dark Chocolate at the beginning of these Dark Chocolate Mocha Goji Cookies, which are seriously, DA BOMB. Okay, I never talk like that, so you should probably pay close attention. Seriously, I was about to post today about another thing I had made a few days ago, but then 4 o’clock hit and I got two cravings at the same time. For something chocolate. And for something chewy. It hit me quite instantly…
You see, I had picked up a packet of Goji Berries from Eco Idees at Naturalia in Paris the other day. Goji berries are little powerhouses. Their antioxidant potency is off the charts. These shrivelled red berries are alleged to boost the immune system and brain activity, protect against heart disease and cancer, and improve life expectancy. Goji berries contain vitamin C, vitamin B2, vitamin A, iron, selenium and other antioxidants (notably polysaccharides). Source: NHS.
I have found a use for them in just about every meal of the day. For breakfast, they were sprinkled on top of my super oatmeal fruit bowl. At lunch, they sat on the shelf, but they came out for an appearance at “gouter” (yes, snack time is an officially recognized meal in France, at least for kids) as “red raisins.” The red raisin fib worked, and little man became our newest lover of Goji Berries.
And at dinner, they were sprinkled over our salad. Seriously we have goji-fied our diet…we just can’t seem to get enough of them. And when my chewy chocolate cookie craving it, well, the idea was instantly born in my head and I skipped over to my little kitchen (which is by the way still in complete dissaray as we STILL don’t have the right kitchen countertops which should finally be delivered next week)… I digress… let’s get on with it and make these total chocolate chewy craving satisfying cookies. Because, really, at this very instant, how you make them is ALL that matters!First, let’s talk flours! You need All-Purpose, Millet Flour, like Bob’s Red Mill: , and Whole Wheat. And you need your trusted pack of unsweetened Cacao powder (I go for Van Houten here in France but you can use Healthworks in the US just the same: . All of the other ingredients are your standard eggs, butter, and sugar, although I did use 2 tbsp of Coconut Oil as well that I melted with the butter.Mixed it all up (everything in one bowl this time, less dishes…)Then once batter is made, fold in the Goji Berries. Spoon in heaping mounds on a buttered cookie tray, like so:
Bake at 200C (392F) for 12 minutes until they have puffed up. Hey, who stole that cookie !?
Enjoy once cool with a glass of cold milk.
Et voila! Gouter at its finest. These Dark Chocolate Mocha Goji Cookies are most definitely kid-friendly and healthy, if that’s important to you. Just try not to eat them all at once!
