This Maple Almond Apple Pie came about rather on a whim. It was going to be just one great big tart, but once I opened my package of pre-made crust to see there was mold on it, I had no choice then to make my own! Making your own crust is actually not so hard, you just need some muscles to knead it together if you don’t have a bread machine or food processor with a dough hook. I made mine just fine without using my food processor, but it would probably save some time if you are in a hurry. But let’s start with the inside of this pie, since it is a little bit original.
Apples, apples, apples. You’ll need about 7 or 8, peeled, cored, diced, like so:

Don’t worry if your crust doesn’t stick together perfectly, just fill in the gaps like I did:
Pre bake the crust at 200C (392F) for 8 minutes. Pull out, then fill it up with apples and lay over the lattice work using the second ball of dough.
Bake another 45 minutes at 200C (392F) for 40-45 minutes. You can lower the temperature for the last 10-15 minutes once you see the filling is bubbling.
I photographed this pie on an overcast day after a rainstorm… you can see our table is covered with debris!
Those are forsythia flowers, our bush is nicely in full bloom 🙂
