There’s no messing around when you need a big honkin’ cookie to sink your teeth into. This is that cookie. Grab a glass of milk and get dunkin’ with these Serious Chocolate Chunk Spelt Spice Cookies. While they have a tad more butter than I’m used to baking with, sometimes you just need a little more of the good stuff to get it right. They are, however, are made exclusively with one flour: farine de petit epautre. This flour is one of the lowest on the glycemic index and has way more protein than other flours. It is a bit hard to track down outside of France, so you can add it to your list of the things to pick up when you make your voyage over here. You can find rather easily spelt flour, although spelt and “little spelt” are actually two different grains. Though you could sub in spelt flour and your cookies will still come out OK.
They are crispy on the outside and a tiny bit cakey on the inside, and are pure heaven.
