Never mind the fact that these Beet Hummus Bites are really good for you… The real “selling point” is that they are cool, crisp, and will wake your tastebuds up this summer 🙂 They are very simple to put together and brighten up the table in a flash. They just require one fresh cucumber, my yummy Beet Hummus, buffalo mozzarella, and some “ciboulette” (chives). A few of these right before the main meal, and you’ve got yourself a perfect starter.
So simple: Cut the cucumber, peel the rind off partially, spread on some hummus, plop a piece of mozzarella on top, and sprinkle with chives. Last step: pop it all in your mouth!
You can also make a different variation with sprouted seeds on top of the hummus instead of the mozzarella and chives. Sprouted seeds, or “graines germés” are a whole topic on their own, and are a wonderful source of high quality nutrients. Sprouted seeds are so healthy because as the grain is sprouting, many of the “locked” amino acids become “unlocked” and are “activated” during this special phase, and the body is able to assimilate them… I’ll be posting in the near future about how to make them and how to eat them, and what to eat them with…
In the mean time, grab yourself a can of chickpeas, some cooked beets, olive oil, cucumbers, mozzarella cheese, chives, and get ready to make these really colorful Cucumber Beet Hummus Bites at your next get-together or BBQ with friends.
